Made with Madagascar Bourbon Vanilla, this chocolate is rich, dark and creamy with a floral, buttery aroma. While we typically believe in letting the true flavour of the cacao shine through without the addition of vanilla, in this chocolate, Ritual has managed to simultaneously balance and enrich the natural flavor of the Madagascan vanilla and Mid mountain Blend chocolate. The premium paid for this particular bar is due to the relatively higher amount of pure vanilla that had been added to create this bar. As luxury comes, the vanilla used is one of the most expensive ingredients in the world. Depending on the supply, this type of Bourbon vanilla from Madagascar can cost from $200 to $400 per pound.

Davies and Stout spent about a year researching and testing different methods of chocolate making before they launched Ritual Chocolate in Denver, eight years ago. They started with one bar and slowly added more over time. Now, they have an assortment of bars and make everyone at their shop on Iron Horse Drive. Ritual aims to be as sustainable and ethical as possible, and the premium prices on their bars trickles directly down to a living wage paid to the well-respected plantation farmers.
